Grouse breast salad with raspberry vinaigrette

Serves 4

This can be prepared ahead, making it ideal for a dinner-party starter. To do this, roast and remove the grouse breasts from the carcass and reheat just before serving. The salad ingredients and dressing can be prepared ahead, but to keep the salad fresh, assemble and toss it together in the dressing while the grouse reheats.

4 oven-ready grouse

Handful of thyme sprigs

50g butter, melted and hot

Sea salt and freshly ground black pepper

8 streaky bacon rashers

150g green beans, trimmed

1 large head of chicory

Half a small head of radicchio
