You can find violet artichokes and baby candy beetroots in good supermarkets.

Serves 1

2 violet artichokes
4 baby candy beetroots
6 new potatoes
Sea salt and cracked pepper
20g fresh rocket, chopped

In separate pans, boil the violet artichokes for 15 minutes, the baby candy beetroots for 40 minutes, and the new potatoes for 15-20 minutes until soft. Next, peel away the tough outer leaves of the artichokes and quarter. Then peel the beetroot and halve the new potatoes. Place the cooked vegetables in a small mixing bowl and season lightly with the salt and pepper. Add the chopped rocket and celery heart.

Drizzle over the vinegar and oil, then mix lightly with your fingertips. Season to taste and serve.
